Ingredients

  • 1 small iceberg lettuce shredded
  • 10.56 oz (300g) sweetcorn
  • 10.56 oz (300g) pineapple chunks
  • 1/2 cucumber
  • 10.56 oz (300g) cooked ham
  • 7.04 oz (200g) celery
  • 10.56 oz (300g) emmental type cheese
  • 2 red onions
  • 4 hard boiled eggs, sliced
  • 7.04 oz (200g) cherry tomatoes
  • 10.56 oz (200g) mayonnaise or miracle whip
  • 10.56 oz (300g) sour cream
  • 3-4 tablespoons mustard
  • grated rind of 1 lemon
  • 2-3 tablespoons lemon juice
  • salt and pepper
  • 1-2 teaspoons sugar
  • 1 bunch chives

Directions

  1. Wash and shred the lettuce.
  2. Drain the sweetcorn and pineapple chunks.
  3. Peel the cucumber, cut in half lengthways, remove the pips and then slice.
  4. Cut the ham and cheese into cubes.
  5. Wash the celery and slice. Peel the onions and eggs and slice. Quarter the tomatoes.
  6. Finally layer all the ingredients starting with a layer of lettuce.
  7. Make the dressing. Mix the mayonnaise with the sour cream, mustard, lemon rind and juice, salt, pepper and sugar.
  8. Chop the chives into rings and mix carefully into the dressing.
  9. Pour the dressing over the salad. Mix together just before serving.
  10. This salad looks beautiful in a deep glass bowl so you can see all the layers.
  11. In fact there may be more than seven!
