Ingredients

  • 1 Stick + 6 Tablespoon butter or margarine (200 grams), set out ahead of time
  • 1 Cup sugar (200 grams)
  • 4 Eggs (medium – large size)
  • 1 Packet vanilla sugar or 1 teaspoon vanilla extract
  • 2 Cups flour
  • 2 ½ Teaspoons baking powder or 1 Packet German baking powder
  • 1 Teaspoon dark cocoa powder
  • 1 Teaspoon cinnamon
  • ½ Cup red wine (1/8 liter)
  • 1 Cups chocolate sprinkles or shavings (100 grams) (Mini chocolate chips would work great too)

Directions

  1. Preheat oven to 350F.  Grease or spray loaf pan or your choice (if using silicone then skip this step).
  2. Separate eggs.  Set aside egg yolks and beat egg whites until stiff, refrigerate egg whites until ready to use.  Beat together sugar and butter or margarine until creamy.
  3. Add egg yolks one at a time, mixing after each and with last yolk add vanilla.
  4. In a separate bowl combine flour, baking powder, cinnamon and cocoa with a whisk.
  5. Alternate adding flour mixture and red wine to butter mixture, mixing until combined.
  6. Stir in chocolate using a spatula.
  7. Lastly, fold in egg whites until incorporated.  Spread dough evenly in the pan and bake for 1 hour.  Check with toothpick.
  8. Once the cake has cooled top with powdered sugar or a chocolate glaze.
  9. Otherwise serve with fresh whipped cream or a combination of these suggested toppings!
