Ingredients
- 1 Stick + 6 Tablespoon butter or margarine (200 grams), set out ahead of time
- 1 Cup sugar (200 grams)
- 4 Eggs (medium – large size)
- 1 Packet vanilla sugar or 1 teaspoon vanilla extract
- 2 Cups flour
- 2 ½ Teaspoons baking powder or 1 Packet German baking powder
- 1 Teaspoon dark cocoa powder
- 1 Teaspoon cinnamon
- ½ Cup red wine (1/8 liter)
- 1 Cups chocolate sprinkles or shavings (100 grams) (Mini chocolate chips would work great too)
Directions
- Preheat oven to 350F. Grease or spray loaf pan or your choice (if using silicone then skip this step).
- Separate eggs. Set aside egg yolks and beat egg whites until stiff, refrigerate egg whites until ready to use. Beat together sugar and butter or margarine until creamy.
- Add egg yolks one at a time, mixing after each and with last yolk add vanilla.
- In a separate bowl combine flour, baking powder, cinnamon and cocoa with a whisk.
- Alternate adding flour mixture and red wine to butter mixture, mixing until combined.
- Stir in chocolate using a spatula.
- Lastly, fold in egg whites until incorporated. Spread dough evenly in the pan and bake for 1 hour. Check with toothpick.
- Once the cake has cooled top with powdered sugar or a chocolate glaze.
- Otherwise serve with fresh whipped cream or a combination of these suggested toppings!
