Ingredients

  • 4 cups All Purpose Flour
  • 1/2 cup Unsalted Butter (1 stick)
  • 1 Egg
  • 1/4 cup + 1 tablespoon Sugar
  • 1 package Active Dry Yeast
  • 1/4 teaspoon Salt
  • 1 cup Milk, lukewarm
  • 1 cup (2 sticks) Unsalted Butter, cut into tiny cubes
  • 1 cup Sugar
  • 1 package Vanilla Sugar
  • 1 1/2 – 2 1/2 cups Flour
  • 2 -3 tablespoons Powdered Sugar

Directions:

  1. In a small bowl, combine the yeast and half of the milk. Mix in 2 tablespoons of the flour and 1 teaspoon of the sugar. Allow this mixture to sit in a warm place for 1 hour.
  2. Combine remaining dough ingredients then add in the yeast mixture. Mix until a smooth dough forms, then knead by hand. Allow dough to sit in a warm place until double in volume.
  3. Preheat oven to 400°F (200°C).
  4. Grease a baking sheet. Roll out dough to fit the size of the baking sheet. Transfer dough to baking sheet.
  5. Prepare the crumbs by mixing the butter, vanilla sugar, and sugar. Gradually work in flour until mixture becomes dry and crumbly.
  6. Sprinkle crumbs over dough, distributing them evenly.
  7. Allow cake to sit and rise for another 30 minutes.
  8. Bake cake for around 30 minutes or until crumbs and crust become golden brown.
  9. Remove cake from oven and allow to cool completely.
  10. Before serving, sift powdered sugar onto top of cake for decoration.

    Monika if you can’t get Dr. Oetker’s (or Ruf, Vahine, or Back Family) vanilla sugar packets take some sugar and put it in a processor with some vanilla extract and pulse to a fine powder. Use a towel over the processor or blender as it “dusts” everywhere. Then place on a rimmed cookie sheet and let stand for 1/2 an hour until it dries out. Store in an airtight container.
    Before the packets were around, you used to just take a vanilla bean or two and split them carefully down the sides, insert into a sugar filled jar and seal. Wait a week or so; then you have homemade Vanille Zucker.

    In batters, one teaspoon of vanilla extract substitutes for a packet of vanilla sugar, but as a topping, plain sugar is an acceptable substitute. It depends on what the recipe requires the sugar for. I Goggled it Monika – I thought the same thing !!! Good luck !!! going to try it as well
